I have a confession. I don’t love kale. It’s not that I hate it, it just isn’t something i go out of my way to make. I’ve had some really good kale salad but some really bad sausage kale soup and kale chips. I think that’s why I’m kind of ehhh about it.
Kale just isn’t something that makes it into my grocery cart. I’m sure by now you’re wondering why I even made baby kale chips then. I just happened to see this baby kale when I was at the store, one that I don’t usually shop at. The baby kale was next to some salad mixes I was getting so I thought hmmm… Baby kale… Prove me wrong, baby kale. Prove me wrong.
And prove me wrong it did. These crispy baby kale chips just as I had hoped they would be. Crispy and delicious. I find that regular ol’ kale gets a little bitter when it cooks, which didn’t happen with the baby kale. The end result was exactly what I wanted. A crispy, salty healthy snack that’s super easy to make. No more bitter kale chips here! I’ll be using baby kale from now on.
If you’ve been on the fence about kale like me, try the baby kale! It’s so tender and mild flavored. It’s really perfect for people like me who are not so sure about kale but want to incorporate it into their diets. I’m sure you’ll be pleasantly surprised like I was.
- 1 4.5oz package of baby kale
- 1½ tsp extra virgin olive oil
- sea salt, to taste
- pepper, to taste
- Pre-heat oven to 300 degrees and line a baking sheet with parchment paper.
- Combine kale and olive oil in a large bowl, mixing to get olive oil onto both sides of every piece of kale. Season with salt and pepper to taste.
- Bake for 10 min. and enjoy!
